“Along with my wife Carmel and Business Partners Mick and Orla, about this time last year we got Anthony in with his food profit and management course. Its up and running now in our Kitchen. We have our master recipes. We have found from the point of view of our business that it has been a very very useful tool in bringing a consistency to the the kitchen and bringing to our attention the differences in our gross profit , where the areas are for us to target on our gross profit. It has highlighted key factors to us that we need to work on to improve our gross profitability and then from the point of view or rosters and rostering of staff it has been a very useful tool in telling us it tells us where and why we have people in and where we shouldn’t have people there . The Great Thing about Anthony is he keeps you focused on whats important to you , putting in goals and targets.
6 months ago a Good Friday for us was 50 Covers now we are nearly double that .
Saturday was always pretty good but we are now doing 130-150 every Saturday.
He always pushes you to get more from your business. I think everyone needs that, someone to push you , you need someone to push you to get as much out of your business as you can .
We are getting proper results and maxmising the time in the business. We all work hard and long hours but we need to get maximum out of that time and that’s where Anthony Helps.
When Anthony came into the business first we lacked focus. Myself and my Father who run the business were not dealing with the things that needed to be dealt with. We were spending too much time doing the €10 per hour jobs, when we should have been doing the €1500 per hour jobs. He gave us focus on better purchasing and the impact to the bottom line.
We put easy to manage systems in place and we were able to see what a small change could make over time to profits. We were able to see what we were doing right and what we needed to improve on. We created the do’s and the don’ts on our service with our team and we got some great ideas that we acted on.
The staff felt more included. It helped us win our customer service award from the chamber of commerce which I feel is a direct result with working with Anthony.
